Chipotle Pork Tenderloins

Ingredients:

  • 6 pork tenderloins (1-inch thick each)
  • 1 cup sliced onion
  • 1/2 cup chipotle peppers in adobo sauce, chopped
  • 1/4 cup lime juice
  • 2 teaspoons minced garlic
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon cumin

Ingredients for mango salsa: 

  • 5 cups cubed fresh mango
  • 2 cups cubed green tomatoes or tomatillos
  • 1/4 cup thinly sliced green onions
  • 1/4 cup minced fresh cilantro
  • 1/4 cup lime juice
  • 1/4 teaspoon salt
  • 1 medium ripe avocado, peeled and chopped

Directions:

  1. In a large resealable plastic bag, combine the onion, chipotle peppers, lime juice, garlic, salt, pepper, and cumin. Add the pork. Seal bag and coat all the pieces of tenderloin in the marinade. Refrigerate overnight, or for at least 1 hour.
  2. Prepare the grill for indirect heat. Drain and discard the marinade from the bag. Grill pork, covered, over indirect medium-hot heat for 20-25 minutes or until a thermometer reads 145°. Let it sit for 5 minutes before slicing.
  3. For the salsa,combine the mango, tomatoes, green onions, cilantro, lime juice, and salt in a large bowl. Gently stir in the avocado. Serve with pork.
